Normalmente são servidos com vários acompanhamentos, com destaque especial para os sabores da carne suína. Devido à sua forma circular, os blini são considerados um símbolo do sol. Segundo a tradição, os blini acompanhavam uma pessoa, desde o seu nascimento até à morte: a seguir ao parto, dava-se à mulher um blini para dar sorte ao recém-nascido; num funeral, os blini não podiam faltar.
Com receitas diversas e consumo em crescimento da proteína animal, a Rússia é hoje o principal mercado da carne suína produzida em Santa Catarina, para onde vão 30% dessas exportações. De modo geral, o Brasil fornece 90% da carne suína importada pela Rússia, país em que as costeletas são o prato favorito das festas e confraternizações.
O consumo per capita de carne suína deve se manter estável na próxima década e há um aumento previsto de 15% entre a preferência dos russos, que estão entre os três principais mercados mundiais da proteína animal.

Blini is a kind of traditional pancakes from Russia, made out of sourdough of white wheat or buckwheat flour, oat, barley or rye, with milk, eggs and cream. In Russia, it’s part of a celebration of the end of the winter, the “Maslenitsa”.
Normally they are served with several side-dishes, with an special highlight to the pork flavors. Due to its circular shape, the blini are considered a Sun symbol. According to tradition, the blini accompanied a person, since its birth until its death: following the childbirth, it was given to the woman a blini for good luck to the newborn; also, funerals weren’t complete without blini.
With different recipes and the consumption of the animal protein on the rise, Russia today is the main market for the pork produced in Santa Catarina, being the destination of 30% of these exports. In a general way, Brazil supplies 90% of the pork imported by Russia, country where pork chops are the favorite dish of parties and get-togethers.
The per capita consumption of pork should remain stable in the next decade and there’s a 15% increase expected on the Russian preference, who are among the three main global markets for animal protein.
